Days 19 & 20.....The FINAL Days :)
Day 19, Monday
Since today was a holiday and I was off, I did a lot of prepping for our final 3 days of the Reset :) Veggies cut and shredded, salads made and a new list of groceries complete for our last few days (and remainder of the week). Prep day and grocery shopping time is always so colorful in my house and very fresh, so we like to make sure that we buy enough so that we can prep for at least 3-4 days at a time, but not too much that it goes bad. I hear so often that people don't buy fresh fruits and veggies because they go bad so fast, but here's the deal:
If it goes bad, it's good for you. If it doesn't go bad, it's bad for you. Example: things that go bad quickly: fruits and veggies = GOOD FOR YOU!!! Things that don't go bad quickly = cookies, chips, sodas, Twinkies (shelf life of WHAT???) = BAD FOR YOU!
Today's meals were as follows:
Breakfast: Fruit Plate
Lunch: Again, I was out for the entire day, ramming around and found myself out for lunch...EEK!! I did keep it healthy...A salad with tomato, corn, cucumber, avocado and a side of dressing... which was an oil and vinegar base, but looked like it may have had a million other additives, so there it stayed, in it's little cup on the side of my plate, and I ate yet another salad with no dressing. You should try it someday. It's actually quite delicious.
Now for dinner: Dinner is shown above. Baked tempeh and steamed Kale with lemon (YUMMM). Well, I made another discovery about my own body. Shortly after finishing this meal, my stomach felt extremely gassy! It was horrible! Then I looked back in my log only to find that my stomach felt like this last week when I at the Tempeh! Well, tempeh is made from soy and apparently my body doesn't enjoy soy/tempeh like my taste buds do. Oh, the things I am learning, but I'd rather know than continue to think I'm eating healthy and that a gassy, bloated stomach is normal and something that just might keep me up all night. I THINK NOT! No more tempeh because this girl who doesn't sleep much, needs all the sleep she can get....especially when she's in bed and actually trying to sleep! I guess it's time I do some research on SOY. I'll share once I check it out a little bit :)
Day 20, Tuesday...UGH, what a HORRIBLE feeling in my belly this AM and I'm SUPER tired from tossing and turning all night and being woken up by my body trying to digest! NOT FUN! Well, with that said, it's time to clean up my belly yet again, fix my mood and move on with fresh fruits and veggies for today :)

Lunch: microgreen salad....YUM! How I've missed you!
Dinner: Stir fry veggies made in coconut oil and a splash of Brags Liquid Aminos
I cannot even begin to explain how much better my stomach felt after tonight's dinner! Eating clean really does make me feel better as a whole: spirit, mind and body.
Day 21, Wednesday!!!!! I did it!!! The FINAL DAY IS HERE! Stay tuned for my results from my final day, measurements and weigh-in!!! WOOOHOOOO!!!

Not only will you feel better physically but emotionally as well. I definitely think it's worth the extra $10-20 to buy fresh & added 30 minutes prep time. Try it, you'll be surprised at how great you feel! Oh and by the way, I haven't even been spending much more on healthy groceries than I used to, so NO MORE EXCUSES! EAT CLEAN!
