Kale, Kale, Kale.....
Well, I never, EVER, NEVER-EVER thought I'd EVER be saying this, but I absolutely LOVE KALE!!!! I've always associated it with cooked spinach....mushy, slimy and stinky....and for those who know me, cooked spinach and I have NEVER, EVER been friends, right mom? I remember one hot summer evening, way back when I was probably about 10 years old when my amazing mom insisted that I eat some spinach (from a can) for dinner...I mean come on....my brother and sister LOVED it!! What was wrong with me!? HMMM.....could it have been the smell? the texture?? Who knows exactly what it was. All that matters is that my mom was coming at my mouth with that fork full of spinach, trying to convince me to try it and all that happened was an awful chain reaction of me gagging for about 5 minutes...It WASN'T happening! To this day, cooked greens completely gross me out (spinach, Italian greens, Collard greens, etc...). I really think it's a texture thing. Until one day......what is that on the menu for day 1 of the Ultimate Reset???? Steamed Kale??? OMG!!!!! NOOOOO!!!!!! Well, I'm SO HAPPY to say, I sucked it up and gave it a try, and what do you know!!???? I actually LOVED IT! I liked it so much that after the Reset was over, I continued to make it! Then I discovered Kale Chips!!! Now THIS is one of my most favorite things to snack on in all the land :) Not only is it an absolutely delicious snack, but it is SO HEALTHY!!!! Chips??!!! Yes, Chips...YUMMY CLEAN CHIPS!!!
- 1 Serving of Kale tossed in 1 Tbsp EVOO (Extra Virgin Olive Oil)
- Spread evenly on cookie sheet
- Bake in oven at 425 for about 10-15 minutes stirring every 5 minutes or so in order for them to cook & crisp evenly
- Remove when crispy and sprinkle with a small amount of himalayan salt and enjoy!
Steamed Lemony Kale with Pine Nuts
- Fill a soup pot with about an inch of water and place the vegetable steamer on the bottom of the pot, spreading the metal leaves wide. Place cut/torn kale leaves in the steamer. Cover, and steam kale over high heat for about four minutes. The leaves should turn bright green and appear slightly wilted.
- While Kale is steaming, use a small frying pan to heat 1 1/2 Tbsp EVOO and add 1-2 Tbsp pine nuts (per serving of Kale). Saute til brown.
- When Kale is finished steaming, remove from heat and portion onto plates. Add juice from 1/4 fresh squeezed lemon and top with 1-2 Tbsp Pine Nuts.
- Eat up this yummy side dish!
